Yes… this recipe is unhealthy! That’s why you only ever make it once or twice a year. It’s sooo cheesy and worth it though! Enjoy!
Ingredients:
8 oz sharp cheddar
8 oz mild cheddar
8 oz monterrey jack
8 oz muenster
1 10.5 oz can cheddar cheese soup
1 box macaroni
2 cups milk (roughly)
2 eggs
1/2 stick butter
1/3 cup cooking oil (roughly)
Directions:
- Bring a big ass pot of water to a boil
- Add cooking oil, noodles and stir
- Cook for about 8-10 minutes, stirring occasionally, until al dente
- Drain, then rinse with cold water and set aside
- Preheat oven to 350°
- In the same pot, add butter, soup, and some of the milk (like 1/2)
- Heat, stirring frequently, on low/medium heat until melted
- Season with salt & pepper (I also like to add a bit of smoked paprika)
- Add cheese and pasta and continue stirring until melted
- Add more milk to improve consistency (should be goopy but not runny)
- Turn off the heat
- In a separate bowl, scramble the two eggs then add them to the pot and stir until well mixed
- Pour finished mixture into a 9×13 pan and spread evenly
- Bake, uncovered, for 35 minutes
