Super Cheesy Macaroni & Cheese

Yes… this recipe is unhealthy! That’s why you only ever make it once or twice a year. It’s sooo cheesy and worth it though! Enjoy!

Ingredients:

8 oz sharp cheddar
8 oz mild cheddar
8 oz monterrey jack
8 oz muenster
1 10.5 oz can cheddar cheese soup
1 box macaroni
2 cups milk (roughly)
2 eggs
1/2 stick butter
1/3 cup cooking oil (roughly)

Directions:

  1. Bring a big ass pot of water to a boil
  2. Add cooking oil, noodles and stir
  3. Cook for about 8-10 minutes, stirring occasionally, until al dente
  4. Drain, then rinse with cold water and set aside
  5. Preheat oven to 350°
  6. In the same pot, add butter, soup, and some of the milk (like 1/2)
  7. Heat, stirring frequently, on low/medium heat until melted
  8. Season with salt & pepper (I also like to add a bit of smoked paprika)
  9. Add cheese and pasta and continue stirring until melted
  10. Add more milk to improve consistency (should be goopy but not runny)
  11. Turn off the heat
  12. In a separate bowl, scramble the two eggs then add them to the pot and stir until well mixed
  13. Pour finished mixture into a 9×13 pan and spread evenly
  14. Bake, uncovered, for 35 minutes
